I adore banana bread and I am not alone. It’s the most popular recipe on this blog. When it comes to breakfast, mine is always oat based. I’ve made a similar recipe to this one as baked oats. Baked oats are delicious and warming, but take time. So with that in mind, I decided I would try it as porridge. It was a success, so delicious.
Ingredients – Serves 1
40g Porridge Oats
100 ml Water
100ml Milk, of your choice
1 Banana, ½ mashed, ½ sliced
½ tsp Cinnamon
Pinch Mixed Spice
TOPPINGS: The sliced banana, some chopped walnuts, a few chocolate chips, and maple syrup.
- Add the oats, milk, water, mashed banana, raisins, cinnamon and mixed spice to a saucepan.
- Bring to the boil, stirring regularly and simmer for a few minutes until you are happy with the consistency.
- Pour the porridge into your favourite bowl. Arrange with your toppings in a manner that makes you smile.
- Take time to savour and enjoy your breakfast before getting on with your day.
Points to note: As with most of my recipes, this one is very adaptable.
I use a combination of milk and water to make my porridge, by all means, use whichever you prefer yourself.
Use more or less of the spices, leave them out altogether if you are unsure.
I haven’t added a sweetener in the porridge. The mashed banana and maple on top provide enough sweetness for my taste. You are free to add sugar or whatever sweetener of choice you like.
