What Caught My Eye

What Caught My Eye This Week?

It’s February!! At long last. It’s been a long time coming. Now, have you got the kettle boiled, I have some great reading material for you this week.

One of the most satisfying meals to make in the kitchen is that one which is conjured up from virtually nothing, those days when you open the fridge and ponder a trip to the shop but instead imagination kicks in and before you know it you’re tucking into one of the most delicious meals you’ve had in ages. Nigel Slaters Unplanned Suppers depict that kitchen magic and if you read it twice you can hear him relay the piece himself!

I really enjoyed Laura Ashley’s first blogger interview for 2018, with Fionnuala from Three Sons Later. I’m a big fan of Fionnuala’s blog, she never fails to inspire me.

Wexford Marine Watch Volunteers are Lifesavers, we are so very fortunate here in Wexford to have this group who patrol our key and literally save lives. I have spoken about them here before, they are an outstanding group of people.

Pancakes are a staple food in my kitchen. This recipe for Fluffy Banana Pancakes is lovely. I’ve never put sultanas in the pancakes, I’ll have to try it!

Watch: Thursday 8th, on Netflix, Dynasty

Listen: EPISODE 2 How To Be Sound. Rosemary McCabe chats with Rebecca Flynn about body positivity and lots of other interesting stuff.
