This is just a quick post to share the recipe I use for Lemon Curd. It is absolutely delicious and refined sugar-free!
2 Egg Yolks
1/3 Cup Honey
Zest of two Lemons
Juice of 3 Lemons
1/3 Cup of Butter
Whisk the eggs, egg yolks, honey, lemon juice and zest together in a pan until you feel it start to thicken, add the butter, turn the heat right down and whisk until it thickens, 5 mins approx…..you’ll know when to stop.
Strain the curd through a sieve and store in a sterilised jar in the fridge, though in my house it isn’t stored for long as it is irresistable!
