Muffin Madness

 

 

My husband arrived in from work this morning & smiling, informed me that he told his work mates he would bring muffins back this evening for them all to have with their tea!!!

So off we went on a muffin making drive, making Chocolate Muffins, Peanut Butter Muffins & Almond Muffins

Muffins – Each Mix makes 12 Muffins

Chocolate Muffins

Chocolate Muffin Ingredients 
250g Self Raising Flour
25g Cocoa
125g Caster Sugar
50g Muscovado Sugar (Use 175g Caster if you don’t have Muscovado)
175ml Milk
2 Eggs
100ml Sunflower Oil
75g Chocolate pieces
2tsp Vanilla

Peanut Butter Muffins

Peanut Butter Muffin Ingredients 
240g Self Raising Flour
100g Sugar
½ tsp Salt
100g Peanut Butter & 45g Butter Melted together
2 Eggs
240ml Milk

Almond Muffins

Almond Muffin Ingredients
240g Self Raising Flour
60g Ground Almonds
60g Caster Sugar
¼ tsp each of Cinnamon, Nutmeg & Salt
180 ml Milk
1 tsp Almond Extract
120 ml Sunflower Oil

For all of the muffin mixes:

 

Preheat oven to 170

Sift the dry ingredients into one bowl.

Add the chocolate pieces to this bowl for the chocolate muffins, add the almonds to this bowl for the almond muffins.

Combine the wet ingredients in another bowl.

Add the dry ingredients to the wet ingredients a little at a time, mixing all the time.

Divide between 12 muffin cases & bake for 20 minutes

Then serve to a bunch of hungry men working hard on a sunny Sunday evening!!! (optional!!!)
