These are quite a dense, filling muffin.
I have listed one of the ingredients as Oat Flour, this is simply jumbo oats that I have blitzed in the food processor.
250g Plain Flour, sifted
100g Oat Flour
100g Jumbo Oats
1 tsp Cinnamon
2 Large Eggs, beaten
1 tsp Vanilla Extract
Pre heat the oven to 180C & line a 12 hole muffin tray.
Put all of the dry ingredients into one bowl & mix them together, make a well in the centre.
Pour the wet ingredients into the dry and mix them together well.
Divide the batter between the cases and bake in the oven for 20-25 minutes.
I had some fresh blackberry sauce and added a teaspoon to each muffin just before going into the oven for a little added sweetness.
