One of the easiest & quickest, though maybe not as quick as my Blackberry Jam, things to make with freshly picked berries is a nice, versatile coulis or sauce or whatever you want to call it 😉
Once you’ve picked & washed your berries, simply pop them in a saucepan with a handful of chopped, pitted dates and a little bit of water, a couple of tablespoons, you’re just covering the bottom of the saucepan. Bring to the boil and simmer gently for 15-20 minutes. You’ll notice I haven’t added any sugar, this is because the dates are acting as a natural sweetener, much better for you!
Then pop the berry mixture into your food processor and give it a good whizz. Pass the mixture through a sieve and voila, you are left with a beautiful, sweet, Blackberry Sauce.
This can then be used for lots of things, have it with delicious vanilla ice cream, spread a little on your morning toast, add it to porridge; I added it to a little cupcake mix, topped delicious muffins with it.
For something a little more unusual, I turned to Nessa’s Family Kitchen for this mouth-watering recipe for Carrageen Moss and added a spoon of the sauce to it, I wasn’t sure how well it would be received but everyone from my fussy eating 9-year-old to my eat all around him 18 month old loved it!
