Gone Banana’s

Like alot of people I do a weekly shop on a Thursday or Friday and also like alot of people, I hate to throw anything out. So what better way to use up the three lonesome banana’s that lay in the bottom of my fruitbowl today than to make
Banana  Muffins
I love muffins, they are easy to make, a basic recipe can be played around with & still be successful. Muffins are ideal for kids school lunches or as an after school snack ; or even with a nice hot, steaming mug of coffee
300g Plain Flour
1 teaspoon each of Baking Powder, Bread Soda & Salt
3 Mashed Bananas
100g Caster Sugar
50g Muscovado Sugar
1 Egg
1 teaspoon Vanilla Extract
80g Melted Butter
Pre heat oven to 180C
Sieve the dry ingredients into one bowl, combine the rest of the ingredients in another.
Mix the wet ingredients into the dry & divide between 12 muffin cases.
Cook for 20 minutes.
*note, these were cooked in a fan oven.
