Banana & Apple Loaf

My children appear to be rebelling against the fruit bowl! Thursday arrived and lo & behold the fruit bowl still contained four very ripe banana’s. Having made Muffins last week & determined not to throw the banana’s in the bin, I got out the cookbooks and settled on a Banana & Apple Loaf. The recipe is from Tana Ramsay’s Family Kitchen.

Ingredients
150g/5oz light Muscovado Sugar
85g/3 ¼ oz softened Butter
2 large eggs, beaten
4 Mashed Banana’s
1 Grated Apple
250g/8oz Self-raising Flour
¼ tsp Nutmeg
¼ tsp Cinnamon
Pinch of Salt

Method

Preheat oven to 180C/350f/gm4.

Grease & line a 2lb loaf tin.

Cream together the sugar, butter & eggs.

Stir in the mashed bananas and apple, and sieve in the flour, nutmeg , cinnamon & salt.

Once well mixed, tip into the loaf tin and bake for 40-45 minutes.

Remove to a wire rack & cool in the tin for 20-30 minutes, remove from the tin & allow to cool completely before serving.

This is a deliciously moist loaf, a perfect after school snack for weary children.
