Lemon Madeira Cake

This recipe is from Rachel Allen’s ‘Home Cooking’, the only difference is that in her recipe she uses oranges, whereas I used lemons, and I didn’t ice mine.

175g/6 oz Butter
175g/6 oz Caster Sugar
1 tsp Vanilla Extract
3 Eggs, beaten
Finely grated zest of two lemons
225g/8 oz Plain Flour
1 tsp Baking Powder
4 tsp Freshly Squeezed Lemon Juice
* Preheat oven to 170C/GM 3. Lightly grease the loaf tin & line with parchment. ( I actually used a loaf tin liner here instead……)
*Cream the butter to soften it further, add the sugar & vanilla extract and beat until the mixture is light & fluffy. Add the eggs one at a time, beating well between each one.
*Sift in the flour and baking powder and fold in with the lemon juice. Transfer the mix to the loaf tin and smooth the top.
*Bake in the oven for 50-55 minutes or until a skewer inserted into the centre comes out clean. Leave to cool in the tin for 5 minutes..
* Transfer to a wire rack & leave to go cold.

  1. I am going to try this recipe and make a 10 inch birthday cake for my husband's 70th birthday. but as he is a golfer, i would welcome some icing tips for a golf presentation. Any help please …
