Scrambled Eggs

Scrambled eggs are always a hit in our house, both my husband and girls love tucking into this homely breakfast.

Ingredients – Serves 3

1 Tbsp Rapeseed Oil (or whatever oil you have)
6 Eggs
1-2 Tbsp Milk
Salt & Freshly Ground Black Pepper
1 Tbsp Mayonnaise (recipe for homemade can be found here http://simplyhomemade-nic.blogspot.com/2011/07/mayonnaise.html )
Chopped Dill
3 Bread Rolls, halved and toasted (recipe can be found here http://simplyhomemade-nic.blogspot.com/2011/07/bread-rolls.html )

1. Heat the oil in the pan slowly, over a medium heat, you don‘t want it sizzling hot. Add the eggs and milk; and season.

2. Using a balloon whisk, slowly bring the eggs together, be careful not to overwork, you want the eggs to have a nice creamy consistency. At the same time toast your bread & have it ready for your eggs.

3. When the eggs are fully combined, creamy & not ‘over’ scrambled they are cooked. Turn off the heat & stir in the mayonnaise and half of the dill.

4. Place the eggs on top of the toast, sprinkle with the remaining dill & serve.
