An Empty Biscuit Tin!! Shame on Me……

My children love biscuits, any sort, and I like making them. They made it known to me this afternoon that the biscuit tin was empty!  The quickest way to sort out this travesty was to quickly make some lovely shortbread biscuits. I use Tana Ramsay’s recipe from her book, ‘Family Kitchen’; I don’t however follow her method, but the kids are happy with these and today, that’s all that matters 🙂
Ingredients
100g/4oz Plain Flour
50g/2oz Cornflour
50g/2oz Caster Sugar
100g/4oz Butter, diced
Method
Preheat the oven to 160C/GM2 ½  & lightly grease a baking tray & dust with flour
Sieve the flour & cornflour together & put into the bowl of a food processor/food mixer
Add the sugar & butter
Turn the motor onto it’s lowest setting, the mixture will become crumbly and then start to come together.
Turn it out onto a floured surface and finish bringing it together by hand, until it resembles a pastry
Roll it out until it’s ½ – 1cm thick and using a cookie/scone cutter cut out your biscuits and place them on the tray
Bake in the oven for 15-20 minutes, until they are slightly golden in colour.
Remove from the tray to a wire rack after a minute or two.
While I kept mine plain today, they can be liberally coated in some luxurious chocolate. When I do this with them, they never actually make it to the biscuit tin…………
