Chloé’s Easy Food Recipe

As I posted previously, our daughter Chloé had a recipe for Chocolate Cupcakes printed in Ireland’s very popular magazine, Easy Food. She was exceptionally proud of herself, as were we. Here is her recipe.
Chocolate Cupcakes-makes 12
Ingredients  
125g Softened Butter
125g Caster Sugar
2 Eggs
1 Teaspoon Vanilla Extract
125g Self Raising Flour
2 Tablespoons Milk
50g Chocolate Pieces (Chocolate drops would be fine but Chloé likes to chop up her favourite bar of chocolate & use this instead, her favourite bar is Galaxy…yum!)
For the butter icing
50g Galaxy or any other chocolate
50g Softened Butter
100g Icing Sugar

Method
Preheat the oven to 190C/GM 5 Line a muffin tin with paper cases
Beat the butter for a few minutes to break it down
Add the sugar & beat until light & fluffy
Add the eggs, one at a time, beating well after each addition
Add the vanilla extract and mix briefly
Add the flour, a tablespoon at a time, ensuring it is well mixed in
Finally, fold in your chocolate pieces and divide the mixture between the cases
Bake for 15-20 minutes, then cool on a wire rack.

To prepare the butter icing, melt the chocolate in a bowl over a pan of water then set aside
Mix the butter briefly to break it down
Add the icing sugar, a tablespoon at a time, mixing well after each addition
When the icing sugar has all been incorporated, mix in the melted chocolate
When the chocolate has been fully mixed in divide the icing between each of your cupcakes, using a palette knife or a piping bag.
Then enjoy them!

Chloé really enjoyed making these cupcakes, and they are absolutely delicious, not that I’m biased!! Though I have to say they may not be kind to your waistline – but we all deserve a treat from time to time.
