With the hedgerows supplying us with an abundance of juicy blackberries it would be a shame not to conjure up some delicious delights with these little gems.
450g Plain Flour
175g Caster Sugar
1 Tsp Baking Powder
2 large Eggs
Grated zest of one orange
150g approx fresh Blackberries
Pre-heat oven to 180C/350F/gas 4.
Line a 12 cup muffin tin with cases.
Mix flour, sugar & baking powder together.
Rub the butter into the flour mixture.
Beat the eggs & milk together & mix into the flour & mix to a stiff batter.
Add in the orange zest & blackberries, mix well.
Divide between the muffin cases & bake for 20-25 minutes.
Lightly dust with icing sugar and serve with a well earned cuppa.
