Good Morning Granola

Granola, it’s expensive isn’t it?

I do like granola though, however I don’t like the price tag, I appreciate it, given what goes into it, but don’t like it. I don’t like how sweet the shop bought varieties are either, so I make my own. It’s super simple to make, I can play around with a basic recipe and I know exactly what’s in it.

Here is a simple recipe, feel free to alter it as you wish, perhaps you’d prefer more fruit, you might prefer maple syrup to honey, maybe you’d like to warm your honey with a few tablespoons of fragrant coconut oil, use different nuts, less seeds, more seeds; you can honestly make any changes you wish and have a lovely breakfast cereal at the end of it.

Homemade Granola

250g Jumbo Porridge Oats

50g Dessicated Coconut

50g Chopped Nuts (I used almonds & pecans)

80g Mixed Seeds (I used linseeds, sesame, sunflower & chia seeds)

4 Tablespoons Runny Honey

100g Dried Fruits (I used raisins, chopped figs & mango)

 

Method

Pre heat the oven to 170C, line two trays with baking parchment.

Mix the oats, coconut, nuts and seeds together in a large bowl.

Stir through the honey and divide the mix between the two trays.

Place in the oven for 10 minutes, turn the mixture and bake for a further 10 minutes.

Place the mix back into a large bowl and allow to cool.

Once cooled, stir in the dried fruits and put the granola into a storage container.

This recipe will give you approximately 14 portions, depending on how heavy handed you are with it πŸ˜‰

It’s delicious served with cold milk, nut milk or fresh fruit and natural yoghurt.
