A Treat for my Patient

Poor Caoimhe fell in school, landing awkwardly on her ankle and finding herself in an awful lot of pain. A trip to A&E found shed done a lot of ligament damage and so she has found herself in a light cast, having to rest her foot as much as possible. To say she’s peed off would be an understatement.

It has left her tired and utterly miserable.

She was watching a movie on Netflix yesterday so I made her a special treat, Raw Chocolate Brownies, a recipe adapted from Hungry, Healthy, Happy.

Ingredients

for the base

75g Walnuts

75g Cashew Nuts

30g Raw Cacao Powder or good quality Cocoa Powder

150g Pitted Dates004

4 tbsp Desiccated Coconut

3 tbsp water

for the top

4 tbsp honey

1 tbsp freshly squeezed orange juice

4 tbsp smooth Peanut Butter

2 bananas

60g Raw Cacao Powder or good quality Cocoa Powder

Method

Place the nuts, cacao powder, coconut and dates in a food processor and blitz until it forms a crumb like consistency, then mix in the water.

Tip this mixture into a square, parchment lined tin (or round if that’s all you have, approx 8“ ) Press it down with your hands so it is packed down.

Next prepare the top layer by placing all of the ingredients into your food processor & blitzing until smooth.

Spread this mixture onto the nut base and then put it in the freezer.007

After a few hours take it out and divide into 16-20 pieces. Keep it in the freezer and just grab a piece when you fancy it.

Caoimhe loved it and was delighted to have a treat made especially for her. And I was happy to see her smile and enjoy something healthy without even realising it.
