Invisible Snacks!!

I wanted some handy little one bite snacks, you know the sort, something small that would sit in the fridge just waiting to be pillaged.

They’d hit the spot for a hungry toddler, a bounced out boy who’s spent the morning on a trampoline, or a moody tween who is simply starving and connot possibly wait THAT long for her next meal; or even for a harrassed mother who is determined to eat healthy and well.

And thats what I did this morning, I threw some of this and a bit of that into a bowl, mixed and baked and left to cool, except for the one that toddler boy couldn’t wait to try.

Then next plan was to take some pictures and share the recipe.

In the meantime however, Caoimhe, the moody tween and Abbie, toddler girl decided to try them, then Harry, toddler boy had to have more and by the time, I, aka harrassed mother had come back to photograph the little Peanut Butter Bites the feckers had devoured the lot!!!

A well made snack it would seem.

Anyway I had taken a pic for Instagram of them and toddler boy munching his.

The fact that they disappeared so quickly should be incentive enough to make them lol

Ingredients

50g Jumbo Oats

10g Sesame Seeds

20g Milled Flaxseed

1 Tablespoon Crunchy Peanut Butter

1 Tablespoon Rice Malt Syrup (Honey or Maple Syrup will work also)

Water to bring everything together, 1-2 tbsp.’s

Method

There really is no great method to this, simply pre-heat your oven to 200C. Mix all of the ingredients together, in a food processor ideally, but by hand will be fine.Add more peanut butter if you like, or sweetner, play around with the ingredients to suit your taste. Roll teaspoonfuls of the mixture into little balls and bake for 10 minutes. Leave to cool, store in the fridge if they haven’t been stolen and devoured!!
