Slim with Tina – Initial Thoughts

As I mentioned previously I was kindly invited to take part in Tina Murphy’s Slim with Tina Kickstarter course.

First and foremost, I want to clarify, this is NOT a ‘diet’ or a slimming class, the aim of this course is to learn to live a healthier lifestyle.

We are halfway through week one and settling in quite nicely.

The course is conducted online where Tina has set up a private group on Facebook where we share our stories, what has lead us to the place we are at and how we hope this course will change things.

Tina is on hand with lots of valuable advice which is great and even though we are only starting, it’s obvious already, that as a group we are very supportive of one another, which is essential I think for anything like this to work.

Tina has also just published a book which is not crucial to the course, however I would personally recommend it, I will provide a more detailed review in a few weeks, but at first glance this book is a great reference guide to have and hold onto, particularly for reference during the during the times when you may be having a bad day.

The book has a great recipe section, with ideas for every mealtime and snacks too. As  regular blog followers will be aware, I live in a house full of bread lovers, I make soda bread 2/3 times per week, so you can imagine my delight flicking through the recipe section and landing on this wondrful recipe contributed by Rosanne from the lovely blog Like Mam Used to Bake.

This soda bread is made with Spelt flour, which I often use for my own  soda bread, it is far more nutritious than regular flour and gentle on your digestive system. For people with diabetes in particular, Spelt flour has a lower glycaemic index, making it a healthier choice.

Flaxseed, also known as linseed, is also included. For the last couple of years, I have included milled linseed in my diet on a daily basis, either adding it to porridge, smoothies or fruit and yoghurt. It is a great source of fiber and Omega 3 fatty acids and super for anybody who may suffer from IBS.

Spelt & Flaxseed Soda Bread

The addition of porrdige oats to this bread along with the spelt flour and linseed makes this a super healthy variation to normal soda bread. If you would like to try this bread, the recipe can be found on the aforementioned Like Mam Used to Bake.  It certainly went down a treat here with my gang of bread lovers devouring half a loaf when they returned from school today.
