We all have bad days, things go wrong from the minute we get up, things may happen that just upset us, maybe something has been building up for while.
Either way bad days happen. Today was a bad day, a really crappy one. I know the text book answer to a bad day would most likely suggest put on your coat and get out for a walk, clear your head. Easier said than done when you’re at home with five children and it’s a horrible wet & windy day.
I am very lucky to have a wonderful group of friends, always willing to lend an ear. The beauty of social media means that they are always available, which is just as well as they are dotted all over the country, making proper coffee dates a rarity, though we do try!
Today was also one of those days that didn’t get any better as it went on, so I figured a treat is in order once the kids are gone to bed. I know, I know, I won’t find comfort in food and if I do indulge in something nice & sweet I’ll be riddled with guilt tomorrow. That’s why I chose a recipe from The Happy Pear cookbook, indulgent and guilt free.
Since the book arrived in our house, the children have made frequent requests for the healthy ‘Twix’ bars. There’s been a lot of talk about this recipe among the Irish Parenting Bloggers too, Jill from Properfud has raved about them; and Sinéad over at Bumbles of Rice made them and declared them magnificent.
So with the day not getting any better I found solace in my kitchen with my trusty food processor, a stash of ingredients and a craving for the finished product.
The ladies weren’t wrong, these bars a divine, I’ve had one and will have more, just as soon as Mr. Simply Homemade gets in from work. A glass of wine has been well earned and these will make the perfect accompaniment. And if the children are lucky I might even keep some for them.
