Raw Coffee & Walnut Indulgence

I love coffee & walnut, they work so well together. I make delicious Coffee & Walnut cupcakes adapting my basic cupcake recipe, however, my tastes have changed somewhat over the last while and as delicious as the cupcakes are, they are also very sweet.

I really wanted something with coffee and walnut however, so off I went to do a bit of research, found this recipe here, on Raw Food Recipes, which inspired something pretty healthy but extremely indulgent.

Simply Homemade

It worked, these are absolutely delicious.

Ingredients

1 Cup of Dates

1 Cup of Coffee, made to your taste, I like a strong flavour so made a strong cup WP_20150408_013

3/4 Cup Oat Flour (blitzed porridge oats)

3/4 Cup Walnuts

4 Tbsp Cacao Powder

1/2 tsp Cinnamon

1/2 tsp Sea Salt

2 Tbsp Maple Syrup

1 Tbsp Coffee

For the top layer

1/4 Cup Coconut Oil

2 Tbsp Maple Syrup

1/4 Tsp Vanilla Extract

1/2 Cup Cacao Powder

Method

  • Soak the dates in the coffee for 20 minutes. Line a tray/dish/tin with parchment. I used a 7″ baking tin. WP_20150408_010
  • Add the oat flour, walnuts, cacao powder, cinnamon & salt to the processor and pulse to bring them together.
  • Add the maple syrup, dates and 1 tablespoon of the coffee the dates were soaking in to the dry ingredients and process until the mixture comes together.
  • Press the mixture into the prepared tin and freeze for 30 minutes.
  • Prepare the top layer by slowly melting the coconut oil & maple syrup together, mix in the vanilla extract and cacao powder. Pour over the base, scatter the chopped walnuts and refrigerate for 30 minutes.
  • I cut this into 12 delicious servings.

These are so good, it’s almost hard to believe they are relatively guilt free, I mean who can argue the health benefits of oats?!
