I have mentioned before how I like to give the children homemade snacks in their lunchboxes as much as I can. One of the things I regularly give them is a scone, I tend to make a batch almost every week and pop them in the freezer, leaving them out overnight & putting them into the lunchboxes before the kids head out to school.
I had planned on making the usual scones today, but when I went to the fridge, a lovely pot of Glenisk Low Fat Raspberry & Peach Yogurt caught my eye, so I thought I would experiment!

2.5 tsp Baking Powder
25g Coconut Sugar or 1 Tbsp Honey*
150g Glenisk Low Fat Raspberry & Peach Yogurt
Preheat your oven to 220c & line a baking sheet with parchment or dust with flour; parchment means less washing up, always a winner!
Sieve the flour & baking powder together into a large bowl, mix in the sugar at this stage if using it.
Rub in the butter, then add the yogurt and honey if you have opted for that as your sweetener.
Bring the mix together with a wooden spoon, until you have a craggy dough, then finish bringing together with your hand.
Lightly roll the dough out on a floured surface, not too thinly, then cut out your scones with cutters and transfer to the baking sheet.
Bake for 10-15 minutes, cool on a wire rack.
When the kids tasted these scones, they loved them, all five of them! Caoimhe looked at the two left on the wire rack and asked if I had more in the oven!! I did very quickly.
*The first batch I made using spelt flour and coconut sugar, for the second batch I doubled the quantities and used ordinary plain flour and honey. They were both equally delicious.
The children are looking forward to having one of these alongside the usual GoYo in their lunchboxes this week!
