An Impromptu Picnic

We decided on Friday evening that Saturday we would head out for the day & bring a picnic. It was last minute so no great time to plan all sorts to go in, which probably wasn’t a bad thing, planning often doesn’t work out.

I had a couple of packets of puff pastry in the fridge and a packet of sausage meat in the freezer, so this was left out and defrosted for sausage rolls.

Quick & Easy Sausage Rolls

1 pack puff pastry (I used the Tesco 375g pack)

350g good quality Sausage meat (I used Sleeda Farm, produced here in Wexford for Pettitts Supervalu)

1 finely chopped spring onion

Finely chopped fresh parsley

1 Beaten egg

Method

Preheat the oven to 180C.

Mix the sausagemeat, spring onion & parsley together.

Divide the pastry into three, divide the sausagemeat into three and place it down the centre of your three pieces of pastry.

Egg wash down either side of the pastry and fold it over, seal the edges with your fingertips or a fork. Using a sharp knife, slice each of the three large rolls into smaller sausage rolls. Egg wash them and place a couple of slits in the top of each one.

Bake for 20-25 minutes or alternatively, if your preparing them in advance, cover them and keep them in the fridge for a few hours or overnight.

As Mr. Simply Homemade was making the sausage rolls, I made the Busy Mama’s very popular chick pea rolls, which are absolutely delicious!

Along with the sausage and chickpea rolls we made a selection of sandwiches. I had some soda bread baked and I bought some delicious Sourdough and Honey & Spelt breads from the new bakery in Pettitt’s Supervalu and made the following; jam in soda bread for Jack, cheese for Abbie & Harry, I had leftover chicken in the fridge so did chicken salad, smoked salmon & feta and Mr. Simply Homemade rustled up Eggy Rockets ( that’s egg, rocket & mayo to the rest of us!)

Being last minute meant I didn’t have time to make a sweet treat for the day so on the way we visited Kettlehill Bakery at the Indoor Retail Market in Clonard. They have the most wonderful selection of cakes, Caoimhe & Abbie helped to choose cupcakes, cream horns, gingerbread bears & a shortbread jammy dodger!

I picked up some bottled water for the children and then we were on our way. Abbie, not remembering a picnic we had last year was particularly excited.

We went to John F Kennedy Park which is just outside New Ross, I recall many picnics here with my own family as child. There are plenty of tables, a tea room onsite so hot coffee/tea can be bought, plenty of bins so absolutely no excuse for any rubbish being left around, a great playground and space, an abundance of wonderful open space.

We had a thoroughly enjoyable afternoon, ate well, walked for miles, had a little train ride, an abundance of adventures and very happy children, what more can you wish for?

  1. Ooh I love a good picnic – and I’m delira the chickpea rolls went down well. They’re fab the next day and freeze well too – though i rarely get the chance to do either with them!

Thank you 🙂 Often remember feeding the ducks too, my Mother loved bringing us there armed with a picnic; I was trying to remember today, I think I may have actually had a school tour to Kennedy Park when I was in Junior/Senior Infants, it was before we moved out so I was in Barntown School at the time, when you’re 5 or 6 it would have felt like we had gone for miles 🙂 It’s such a beautiful place, we’re very lucky here in Wexford, there are so many lovely places to go. The chickpea rolls are lovely.

The poor deprived child :-O Actually, they’re a rarity here, because I’m a fussy one who insists on making my own, I **may** have told my son who loves them that I can only make them at Christmas because that’s the only time sausage eat is available….’sure make them with sausages Mam’ Answer for everything lol 😀
