Cheering up a Little Boy

Our little fairy girl started pre school last week, we were well prepared for it, or at least I thought we were.  I hadn’t quite bargained for the level of sadness our Cuddlemonster seemed to feel.

She had tasked him with looking after Ozzie her Kangaroo while she was in pre school and he took his role very seriously. I couldn’t see him so down all morning so in an effort to cheer him up I got him into the kitchen and ‘helped him’ make some cookies he could share with his sister when she came home.

Ingredients

200g Wholemeal Spelt Flour InstagramCapture_93922d96-c4c8-4fc5-ba59-4b1e6583b0ad

1 tblsp Cacao Powder
1 tsp Baking Powder
1 tsp Ground Ginger
1 tsp Cinnamon
75g Butter
75g Coconut Sugar
3 tblsp Honey

Method

Preheat the oven to 180C and line a tray with baking parchment

Add the wholemeal spelt flour to a large bowl and then sift in the cacao, baking powder, ginger and cinnamon. Give them a little stir to combine (or if you’re 2 a very big stir!)

Add the coconut sugar, butter & honey to a saucepan and melt together over a low heat.

Pour the liquid into the flour mixture and stir it n. It will come together in a wet feeling dough, that’s fine.

Lightly flour your work surface, get the enthusiastic 2 year old to roll out the dough, before re rolling yourself!

When the dough is rolled out,  let same 2 year old press out cookies and throw lay them onto the baking sheet.

Bake for 10-12 minutes, leave on the tray for a minute or two before transferring to a wire rack.

As soon as they’re cool the 2 year old must try one.

These could very easily be iced or coated in chocolate, adorned with faces, outfits etc….or just eaten.

  1. Such cuteness. Baking is fun with little ones once they are at an age to do this. I love the way the teddy bear has an apron on too. the cookies look delicious. Makes me want to bake with Matthew again. I enjoy baking more than I do cooking.

  2. Loved your postxxx I hope Ozzie the Kangaroo had a cookie aswell. Lovely post and one of favorite things to do with my own little lady is to bake!x So therapeutic and takes your mind off work and back to where it should be family and homexxx Looking forward to reading more postsxx
