Uncle Jim’s Brown Bread

Uncle Jim isn’t my Uncle Jim, he is actually Uncle Jim of the McGargle family brewers (www.ryeriverbrewingco.com). I had picked up one of their sampler packs recently and when we opened the bottle of Uncle Jim’s stout I thought it would be lovely in a loaf of bread, it smelled so good. I couldn’t describe it any better than McGargles so here is their description; A smooth, well rounded stout. The aroma gives off a subtle coffee and chocolate nose which balance perfectly. The flavour of chocolate carries into the taste and balances impeccably with the bitterness from the Herkules hops!

250g Wholemeal Flour

200g Plain Flour

60g Chopped Walnuts

50g Pinhead Oatmeal

2 tsp Bread Soda

1 Bottle McGargles Uncle Jim’s Stout

50g  Butter

1 tbsp. Honey

Method

  • Preheat the oven to 190C/170C fan and prepare a 2lb loaf tin.
  • In a large bowl combine all of the dry ingredients.
  • Melt the butter then mix the honey and stout into it.
  • Pour the wet ingredients into the dry and stir everything together well, ensuring all of the flour is mixed in.
  • Transfer the mix to the loaf tin and bake for 45 -50 minutes, until the loaf has risen and sounds hollow when tapped underneath.
  • Cool on a wire rack before slicing and enjoying.

The flavour from the stout is just delicious and paired with good Irish butter and Wexford Home Preserves Apple & Blackberry jam it is a delight on the palate. As we approach Christmas pudding time, I couldn’t imagine a better stout to pair with the fruits and spices of the festive season.

  1. Although I don’t like coffee or coffee smells (yeah, I’m a weirdo!!) I do like Guinness Bread, so I think I really would like this. I love the photo of the slice of bread with butter and jam. Has me drooling!
