Soda Bread Pizza

Pizza night is, I’m sure, a common night in many households. It’s certainly a favoured night here, with pizza featuring almost every second Friday. Sometimes I make regular pizza dough and other times, in particular if we’ve been out or busy in the garden I make soda bread pizza which is simply my soda bread recipe used as a pizza base!

This is so quick, it’s a great speedy alternative to regular dough. One large pizza base can be made or, as we all prefer different toppings, what I do most often is prepare my dough, weigh it and divide it into 7 equal sections to make individual pizzas. They are then easily topped with preferred options

Ingredients

450g Plain flour
1 Tsp Bread Soda
1 Tsp Salt
320-350 ml Buttermilk
A handful of seeds such as chia, sunflower, linseeds etc (optional)

Topping suggestions

Tomato sauce*
Spinach
Anchovies
Peppers
Sundried Tomatoes
Spring Onion
Sweetcorn
Pineapple
Ham
Grated Cheddar
Mozarella
Pancetta
Pepperoni
Mushrooms

*If you don’t have any tomato sauce made, we have often used a delicious relish.

Method

  • Preheat the oven to 180C and line or lightly flour one baking sheet if making one large pizza. Prepare more than one tray if making smaller individual pizzas.
  • Add the plain flour, soda bread and salt to a large mixing bowl. Stir together, combining the ingredients well.
  • Pour in some (320mls approx) of the buttermilk, then lightly bring it all together with a wooden spoon.If the mix is too dry add some more of the buttermilk, too wet add extra flour.
  • Turn the dough out onto a lightly floured surface, and lightly kneading it, bring the dough into a round shape.
  • Weigh and divide into the number of pizzas you require. Roll them out on a floured surface and add to the prepared trays.
  • Gather everybody around and add your preferred toppings to the pizzas.
  • Put the pizzas into the  oven and cook for  2o -25 minutes, keep an eye on them!

We find these very filling, the first time we made them we were stuffed as I had made some homemade chips to accompany them. Now we either have salad or if we’ve been generous with the toppings, we have them without any extras.
