Banana Bread Tiramisu

Happy New Year!

It’s New Year’s Day, a day where in the Simply Homemade home we chill out with the children, look ahead to 2017, drink bubbly drinks and eat delicious food!

You may have seen a recipe floating around via Buzzfeed before the festive season for Banana Bread Tiramisu. It looked quite nice so I earmarked it in my mind for today’s dessert and here it is.

I’ve made a few tweaks to the original. It is more of an assembly than a recipe so is really something you can adapt to suit you. I did no weighing or measuring for this dessert; which I think you may agree, is another bonus!

Ingredients

Banana Cake (I made this banana loaf minus the walnuts & raisins)
Black Coffee
Whipped Cream (250g approx)
2 Banana’s, sliced
Handful Chopped Pecans
1 Tbsp Honey
Grated Chocolate
Handful of flaked Almonds

Method

Slice the banana cake and layer half the slices in the bottom of a dish.
Brush the cake with a generous amount of coffee.

Add half the cream and spread it out. Top this with the pecans and drizzle with honey.

Add another layer of the cake. Brush with the remaining coffee.
Add the remaining cream, grate chocolate over and add a sprinkling of sliced almonds.

That’s it, couldn’t be simpler. The result is delicious! Moist cake, crunchy nuts, a hint of sweetness and not an overwhelming amount of cream.

As I mentioned, this recipe is adaptable so make it to suit you, you may wish to leave out the nuts or add a different variety. You may wish to use honeycomb in place of the nuts or ginger cake in place of banana. Mascarpone instead of cream. There are a myriad of options.
