Hummus

Mr. Simply Homemade reckons I have an addiction to chickpeas, there is always a tin or 4 in the back of the larder press. Every week I buy a couple of tins and every week I use a couple of tins. I’d hate to run out!

One thing I make regularly is hummus, I love the stuff. It’s quick and easy to throw together and the results when you make your own are far before anything you’ll find in the supermarket. When you’re making it yourself of course, you can adjust the flavour to suit yourself.IMG_3480

Ingredients

A 400g Tin Chickpeas
Juice of 1/2  a Lemon
1 Tbsp Tahini
1Tbsp Rapeseed (or Olive) Oil
I clove Garlic, grated/crushed
1 Tsp Cumin
1/2 Tsp Paprika
A splash of cold water
Sea Salt & Black Pepper

Method

There is no great method to hummus. Place everything into the food processor and blitz until smooth. Adjust the seasoning as you go along; and the consistency. I saw a recipe for hummus somewhere some time ago,  from Yotam Ottolenghi, which had cold water added, that’s when I started adding water to mine, it really makes a difference, the hummus has a much creamier consistency.

There you have it, hummus. I love it with salads, veggie burgers, as a butter substitute on sandwiches, in wraps, as a dip etc You get the idea. It’s so versatile and very handy to have in the fridge.
