This time of year I switch up my breakfast. As the warmer weather hopefully takes hold, I consume less of the warm, hug in a bowl type breakfasts. Smoothies are a popular choice in my kitchen. The children really enjoy them and as I always add porridge oats, I am assured they’ll be kept full until break time.
I always have a stash of frozen fruit in the freezer, it’s ideal for smoothies and overnight oats. I also buy the ‘yellow sticker’ bananas in the supermarket. Whilst some of them are used for muffins & banana bread, some aren’t. I peel them, cut them in half and pop them in the freezer too.
Blackberry & Spinach Smoothie
Ingredients – serves 1
250g Frozen Blackberries
1 Banana (can be frozen)
A Handful of Spinach
40g Porridge Oats
1 Tablespoon Milled Flaxseed (Linseed) -optional
100ml Milk of your choice
- Add the blackberries and banana to your blender, followed by everything else.
- Pulse a couple of times to break down the frozen fruit.
- When this is done, blend for a minute or two (the length of time depends on the power of your blender, but no machine will take more than a few minutes)
- Serve in a lovely glass and enjoy!
