Gingerbread Biscuits

My son has been asking me to make him some Gingerbread Biscuits, which has surprised me as he’s a VERY fussy eater, bland & white are the two words which spring to mind when I think about his diet. Needless to say, it can get very frustrating, however as he requested them, I obliged and I’m pleased to say he loved them. This is another one of those ‘ripped from the pages of a magazine & stuck in a notebook’ recipes!

150g/5 ½ oz Margarine
100g/3 ½ oz Muscovado Sugar
2 Tbsp Golden Syrup
350g/ 12oz Plain Flour, sifted
1 tsp Bicarb Soda
3tsp Ground Ginger
1tsp Cinnamon

* Preheat oven to 200 C/GM6.
*Melt the margarine, sugar & syrup in a pan. In a large bowl mix the flour, bicarb, ginger & cinnamon, then stir in the margarine mixture to make a stiff dough..
*Roll out the dough on a lightly floured surface & stamp out your biscuits.
*Bake in the oven for approx 10 minutes.
* Transfer to a wire rack & leave to go cold.

These are real biscuits, that snap when you break them & are wonderful for dunking into that afternoon cuppa!
