Lemon Curd

This is just a quick post to share the recipe I use for Lemon Curd. It is absolutely delicious and refined sugar-free!


2 Eggs  WP_20150509_014

2 Egg Yolks

1/3 Cup Honey

Zest of  two Lemons

Juice of 3 Lemons

1/3 Cup of Butter


Whisk the eggs, egg yolks, honey, lemon juice and zest together in a pan until you feel it start to thicken, add the butter, turn the heat right down and whisk until it thickens, 5 mins approx…’ll know when to stop.

Strain the curd through a sieve and store in a sterilised jar in the fridge, though in my house it isn’t stored for long as it is irresistable!

  1. Thank you for this. I’m trying to cut out sugar as much as possible, and my recipe has a considerable amount. Glad I tested this too, as I know it is QUITE delicious 😉
