Peach Crumble

Himself has a liking for fruit crumbles, so having some lovely peaches sitting pretty in the fruit bowl, I decided to indulge………everyone deserves a treat after all
Ingredients for four individual crumbles
4oz Plain Flour
¼ Tsp Cinnamon
¼ Tsp All Spice
4oz Brown Sugar
4oz Butter, cubed
4 Peaches, stoned & sliced
½ Tsp Cinnamon
1 Tsp Vanilla Extract
1 Tsp Lemon Juice
2oz Sugar
2 Tbsp Water
Method
Preheat the oven to 180C/GM 4
To prepare the fruit, place everything into a saucepan over a medium heat until the sugar dissolves,
Simmer until the fruit has become soft, set aside and prepare the crumble topping.
Sift the flour & spices together into a mixing bowl
Mix in the brown sugar
Add the butter and ‘rub’ into the flour mix using the tips of your fingers, until the mix resemble coarse bread crumbs. Don’t worry if you’ve got some little ‘clumpy’ bits, this is just fine.
Place the fruit into ramekins and top with the crumble
Bake in the oven for 20-25 minutes
Allow to cool slightly, then serve.
These crumbles are delicious served with custard, cream or ice-cream. They also freeze very well. Himself was very impressed and as I type this, is tucking into a second one!!
