Rainbows & Unicorns

So my fairy is 4. I’m not sure how much longer I’ll get away with calling her my fairy, perhaps I’ll never stop, perhaps the day will come when she will say, ‘Really Mom?’ and that will be that; but for now that tiny little baby who arrived 4 years ago, who is sweet, kind & funny, is still my fairy.


I don’t recall any of my older three children being quite as excited about their 4th birthdays as she has been. I guess that’s what comes with having older siblings C6encouraging the anticipation of this very important day. She was a bubble of excitement all week, counting sleeps, waking early, asking ‘What day is it today Mom?’.

She chose her cake at the same time the Cuddlemonster chose his. She wanted a unicorn cake with rainbows. She was very specific about the unicorn….it had to be standing. So off I went to look for a standing unicorn cake topper a week before her birthday because I’m not the organised person I once was. After many hours online that I will never get back and a little outburst regarding my frustration, I was informed that Twilight Sparkle is in fact a unicorn. Why on earth could I not have been told this sooner? So I bought a Twilight Sparkle (she’s a My Little Pony who isn’t a pony, but a unicorn, though she has wings so perhaps she’s really not a unicorn either….who knows?) only to find the fairy that evening playing with a Twilight Sparkle that Santa had left in her stocking! In fairness, I’m only her Mom, how would I know what Santa left in her stocking?! The unnecessary stress this cake has caused me!

I sourced the recipe for this cake here, the main change I made was to use buttercream.

Rainbow Cake

Ingredients C2

*NOTE – To make 6 layers you will need three times this ingredient list.

125g Butter, softened
150g Caster Sugar
3 Eggs
1 tsp Vanilla Extract
225g Plain Flour
1 tsp Baking Powder

Food Colouring -I used three; Red, Yellow & Blue. I mixed red & yellow for orange, red & blue for purple and yellow & blue for green.


  • Pre-heat the oven to 180C/160C fan.. Grease & line 2 x 20cm round sandwich tins
  • Add the butter & caster sugar to your mixing bowl and beat until light & fluffy.
  • Add the eggs one at a time, beating slowly, then add the vanilla and the flours. Beat everything until you have a nice smooth cake batter.
  • Then, weigh the cake mixture into another bowl and remove exactly half again, to another bowl. Pick 2 of your 6 colours and stir a little into each mix. Put in as much as you need, until you are happy with your colour.
  •   Put the batters into the tins and smooth them out. Put them into bake on the same oven shelf for 12 mins until a skewer poked into the middle comes out clean.
  • Turn the cakes out onto a wire rack to cool.
  • Wash the tins and bowls thoroughly, and start again  – this time using another 2 colours and then again until you have 6 sponges in different colours.

Buttercream Icing

I mixed together 300g Butter with 600g Icing Sugar, the grated zest of an orange, a good squeeze of orange juice and 2 tbsp milk. I sandwiched the sponges then added some red food dye to the remaining butterceam, just so I had a pale pink colour to go over the outside of the cake.


I dyed pieces of fondant and made the rainbows and other little pieces. Now, I am well aware that the colours are not exact replica’s of those rainbows we see so often in pictures, but then they aren’t exact replica’s of real life rainbows either. Call it artistic interpretation!


Abbie absolutely loved this cake, she was thrilled with it.

The Admission! What’s this about you may  wonder. I always have and will continue to be honest on this blog so instead of just saying she loved her cake and leaving it there, I can’t. I do my best to monitor the children’s sugar intake, in that I am striving for balance & a healthy attitude not a complete ban. As regular readers know, I use natural sweeteners when & where I can but when it comes to special occasions, naturally I will bake the cake they request. This particular cake, while lovely to look at, contains an insane amount of sugar and food dye.This definitely had an impact on behaviour & little tummies; and is not a cake I would bake again. Perhaps I sound very dramatic but it was very excessive and just not what they’re used to.


Having said that, it’s all down to choice and if you choose to bake a rainbow cake, be proud, it’s a lot of work, and enjoy it! There is nothing like that feeling when you present a cake to the birthday child for the first time and they’re full of wows and exclaim how wonderful you are.
