Small but Mighty, Oat & Seed Bites

Caoimhe & Jack come in from school hungry despite getting a good lunch, they’re children, they’re programmed to be hungry….a lot! We don’t have dinner until after 5, when Chloé gets in from secondary school, so we need to have a supply of healthy, filling snacks at the ready to keep the hunger pangs at bay.

They’re a great little snack for the toddlers too, who are always ready to accept a snack, after lots of energetic pulling the house apart playing!


These little bars are small but mighty and do just the trick. They’re packed with oats and seeds and contain pure peanut butter, I like Meridian.


75g Butter

50g Peanut Butter, I use the crunchy variety

3 Tbsp Runny Honey

225g Porridge Oats

50g Coconut Sugar

1 Tbsp Chia Seeds

1 Tbsp Sesame Seeds

1 Tbsp Cacao Nibs



Preheat the oven to 190C and line an 8” square tin with baking parchment.

Place the butter, peanut butter & honey in a saucepan over a low heat.

In a large bowl combine the oats, cocnut sugar, seeds and cacao nibs.

When the honey and butters have melted; you may need to stir it well to break down some of the peanut butter, pour the mix over the dry ingredients and mix well.

Tip the oaty mixture into you tin and press it down well.

Bake for 15-20 minutes, allow to cool in the tin before dividing into 16 squares and storing in the fridge.



These are small but mighty and put a halt to the cries of ‘Maaaam is dinner nearly ready?!’
