The first thing I conjured up with some of the bounty of blackberries we gathered this year was this super quick, super simple, anyone can do this, Blackberry Chia Jam.
I love Chia Seeds, they’re a wonderous little seed, packed with omega 3, protein, fibre, antioxidants and a myriad of vitamins and minerals. At first glance you may think chia seeds are expensive, however, I can assure you, a bag will last at least a month. To find out more about these little super seeds check out Chia Bia here.
To make my jam, I turned to, Susan Jane White, I discovered Susan on a quest to a healthier lifestyle, I would highly recommend her website and her book, Extra Virgin Kitchen to anybody looking to make some improvements to feeling better within themselves from a nutritional point of view.
This recipe is a variation of Susan Janes’ Raspberry Chia Jam.
125g washed blackberries
1-2 tablespoons chia seeds
3 dates, pre-soaked and stones removed
Pop the blackberries, chia seeds and blackberries into the bowl of your food processor, or a jug if using a handheld blender.
Give them a good blitz.
Transfer to a jar/bowl, whatever you have to hand and allow to sit for 40 minutes before using.
It could not be any simpler 🙂
